Abstract

This study discusses the possibilities for improvements in the process of caçhaça production that would make possible through training and introduction of technological a innovations that can be implemented by producers from a city located in northern part of the Rio de Janeiro State traditionally known by the sugarcane sector. The information about the manufacturing process was obtained by analyzing a multiple case study, aided by a comparison with a successful experiment that took place in the same sector in the state of Minas Gerais. The structural changes would be made possible through training and introduction of technological innovations which one could overcome the barriers that hinder the achievement of a better quality product and the requirements for certification, providing competitive conditions in the cachaça produced in other regions of the country.
